They say breakfast is the most important meal of the day. So what better way to start breakfast than with some bus life breakfast potatoes. These breakfast potatoes are a great addition to any breakfast or brunch and are perfect to make when you have a large gathering of people. These breakfast potatoes include onions peppers sausage and of course potatoes. Whether you’re looking for something simple or complex this breakfast potato recipe can be adapted for any occasion.

These bus-life breakfast potatoes are one of the biggest hits when I’m on live so I figured it was time to write down the story and share the recipe with you all. Before I get started on my bus life breakfast potatoes I always start with some coffee. The coffee is ready to go it’s time to start on breakfast. This recipe is pretty straightforward it involves dicing up the vegetables and cooking it all together so that it becomes a fantastic potato hash. Now that knife skills are understood let’s dive in. The first step is to select your ingredients so we’re gonna need some russet potatoes a medium onion and two bell peppers of any color you prefer. I personally like to go with red and orange bell peppers but green bell peppers work just as fine. The only reason that I don’t use yellow is that yellow blends in and creates a less vibrant dish. We’re gonna start by washing all of our produce to make sure it’s clean and ready to start dicing. Once everything is washed grab your favorite chef’s knife and a cutting board and let’s get started.

First, we are going to start with our potato. I like to keep the skin on mine for added texture and flavor but if you don’t like the skin feel free to remove it. The goal is to dice our potatoes into 1-inch cubes so that they cook evenly and are easy to eat. Once your potatoes are diced we’re going to focus on the onion again the goal is 1-inch cubes so that they cook evenly and our bite-size are ready to eat. Now that the potatoes and onions are ready we are going to focus on the peppers. First de-stemmed them then deseed them and lastly diced them into 1-inch bite-size pieces. Now that our produce is prepped and ready it’s time to start cooking.

For this dish, we are going to need a large sauté pan over medium high heat. Next we will add olive oil and our potatoes. Cook the potatoes for 5 to 10 minutes or until they begin to brown. Next, add the onions to start sautéing with the potatoes. Finally, add your bell peppers to the mix and continue to stir and sauté as they cook. Now gather your spices and begin to season your potato and vegetable mixture. Well the vegetables are cooking prepare your breakfast sausage links by cutting them into 1-inch pieces and adding them to the pan to cook.

Continue tossing or stirring the potatoes while they finish cooking add salt and pepper to taste. You will know the potatoes are cooked when they are tender with a fork and crispy on the outside. Ingredients

  • 5 Russet Potatoes or any other potatoe
  • 2 TBSP Olive Oil
  • 1 Medium Onion
  • 2 Bell Peppers
  • 8 Links Breakfast Sausage of Choice
  • 2 TBSP Peprika
  • 1 TBSP Garlic Powder
  • 1 TBSP Cumin
  • 1 TBSP Chili Powder
  • Salt & Pepper to Taste
  • 2 TSP Pepper Flakes (Optional)

Instructions

  • Start by dicing potatoes into 1 inch cubes.
  • Dice onions and peppers
  • Add olive oil to large sautee pan over medium-high heat
  • Place cubbed potatoes into pan to begin cooking. Cook 5-10 minutes until potatoes start to brown
  • Add Onions and Peppers to the pan. Season with paprika, garlic powder, cumin, chilli powder, and salt & pepper
  • Cut breakfast sausage links into 1 inch sections. Add to pan
  • Continue cooking until all ingredients are tender and potatoes are crispy.
  • Serve with your favorite breakfast foods.
